What is Rocky Road Candy?
Rocky road candy is a traditional recipe made with chocolate, nuts, and marshmallows. This rocky road candy recipe is unique with a Grinch flair.
Ingredients
- 2 Cups Mini Marshmallows
- 1 12-Ounce Bag Vibrant Green Candy Melts
- ½ Cup Almond Slivers
- 1 Tablespoon Coconut Oil
- Large Red Heart Sprinkles
Supplies
- Baking Sheet
- Parchment Paper
- Medium Mixing Bowl
- Rubber Spatula
- Spoon
Instructions
- Line a baking sheet with parchment paper.
- Place the candy melts in a medium, microwave-safe bowl and microwave them on high for 3 minutes or until smooth and creamy. Stir every 30 seconds during the cooking process so you don’t burn the candy melts.
3. Add the coconut oil to the mixture and stir until combined.
4. Add the marshmallows and almonds. Stir until they’re fully coated.
5. Spoon onto the prepared baking sheet in heaping, big spoonfuls. Immediately top each cookie with a red heart sprinkle.
6. Place in the fridge to chill for about 10 minutes or until hardened. Enjoy!
Tips
- Rocky road candy comes in various styles. If desired, reduce the number of marshmallows and add in a few other popular options such as candied fruit, dried fruit, walnuts, pecans, or even pistachios.
- If your chocolate seems extra thick, add a bit more coconut oil and work it in, adding more if needed, until the desired consistency is reached.
- I don’t use whole almonds as it makes the candy harder to eat. The almond slivers were the perfect size for the candy.
- If you can’t get any vibrant green candy melts, you can use another shade of green, or use white chocolate chips with a green oil-based dye.
How to store Rocky Road candy
- Keep these candies in the fridge or freezing for the best results and longevity. They can be stored in a sealed container in a cool, dry pantry-style setting, but they won’t last as long.
Gift ideas
- Place Grinch treats in treat bags or food-safe bags to gift to friends, family, and teachers!
