Best of all, they make great leftovers if you have any left that is! It can also make a great chicken taco salad.
The secret to the unique flavor of this dish is in the chicken rub and the stand-up shells. These shells stand up, making it easy to stuff them to the max with chicken. Guests also have the chance to customize their tacos with a variety of garnishes without the hassle of having the taco flip over to spill.
The Perfect Slow Cooker Tailgating Recipe
Ingredients
- 1/3 cup honey
- 2 pounds skinless, boneless chicken breasts
- 1 1/2 teaspoons chili powder
- 1/4 cup chipotle mayo
- 1 tablespoon ground cumin
- 1 1/2 teaspoon paprika
- 1 1/2 teaspoon onion powder
- 1 1/2 teaspoon garlic salt
- salt and pepper to taste
- Stand ‘N Stuff™ Taco Shells, 10 count and/or Flour Tortillas
- Red Cabbage, diced
- Avocados, sliced
- Cilantro, chopped
- Lime wedges (to juice)
- Cheddar Cheese (shredded)
Instructions
First, make the chicken rub by mixing the following ingredients: chili powder, ground cumin, paprika, garlic salt, onion powder and chipotle mayo.
Next, place chicken on the bottom of the slow cooker.
Place the chicken rub over the chicken, then pour honey next. Spread the marinade to cover the chicken evenly.
Cover and cook chicken for 3 hours on high or 5 hours on low in a slow cooker.
Meanwhile, prep garnishes except for avocados. Toppings include cabbage, cilantro, and limes. Cut the avocados right before serving to avoid the slices turning brown.
Once chicken is cooked, place in bowl and shred using two forks.
Place chicken back into the slow cooker with the juices on warm.
Preheat oven to 325 degrees to warm the taco shells. Place the taco shells on cookie sheet laying flat like shown on the package. Cook for 6 -7 minutes.
If using flour tortillas warm them in microwave or skillet.
Once the taco shells and/or tortillas are warm, place chicken inside first, then top with cilantro, cheese, cabbage, avocados and squeeze lime juice over tacos.
