How to eyeball brownies
- Preheat the oven to 350 F and line a baking pan with wax paper. This will make removing the brownies from the pan much easier. For a thicker brownie, use an 8×8, 9×9, or 11×7 baking pan. Use a 9×13 baking pan for a thinner brownie. Make sure to adjust the cooking time per box instructions.
- In a large bowl, prepare the brownie mix as per box instructions, and make sure not to overmix. Mix at a medium speed when using an electric mixer. Consider using milk or chocolate milk instead of water to create more flavorful brownies.
- Pour the brownie batter into the parchment-lined baking pan and spread evenly, making sure to fill the corners. Scrap the sides of the bowl to ensure you got every last piece of the delicious mixture.
- Then, place the cookie sheet in the oven and bake as per box instructions, about 20-25 minutes, or until a toothpick inserted one inch from the edge comes out clean. Use oven mitts when removing the brownie pan. When finished, let cool on a wire rack completely before frosting and decorating.
- For the ganache: Heat the heavy whipping cream in a microwave-safe bowl or stovetop just until it starts to bubble. Then divide it and pour a little into each bowl of melting wafers.
- Let it sit for about one minute and then stir each one until the wafers are fully melted. If you would like a thinner ganache, add more heavy whipping cream or coconut oil. To thicken it, add more melting wafers. Set aside.
- Once the brownies have cooled, add drops of the different colored ganache on top and alternate the colors.
- Leave mixture as is or create swirls and designs to mix the colors up. Use a toothpick to make the swirls.
- Scatter Reese’s chocolates and peanut butter chips on top. Then, add eyeballs and orange sanding sugar. Have fun and get creative with your toppings. Consider adding candy corn on top of brownies to add to the Fall flair.
- Next, cut into squares and serve! Enjoy!
Recipe Notes
Here are some helpful tips and substitutions to consider when making the brownies:
- Use your favorite brownie mix or brownie recipe as the base of the recipe. Cake mix can be substituted but it will form a different mixture.
- Looking to save time? Purchase store-bought frosting.
- Feel free to switch up the ganache colors. Use various colors of melting wafers and orange sanding sugar or sprinkles.
- Have leftover Halloween candy? Chop regular or king-size chocolate bars.
- Love peanut butter? Try baking some of the peanut butter chips or natural peanut butter into the brownie. Another option is to chop up some peanut butter cups. Mix peanut butter mixture into the batter before pouring it into the baking pan.
- Don’t have melting wafers? Use melted white chocolate or almond bark. Add food coloring to achieve desired colors.
How to store brownies
Store Halloween brownies cut into squares in an airtight container at room temperature. They should stay fresh for 1-2 days. A whole pan (not cut) will be kept fresh at room temperature for up to 3-4 days or in a freezer for up to three months.
