- 15.25 oz box strawberry cake mix – Betty Crocker and Duncan Hines both make a good cake mixes.
- ½ cup vegetable oil – adds moisture to the cake mix.
- 2 large eggs – without eggs your cookies will be very dry and crumble.
- 1/2 cup white chocolate melts (optional) – a fun addition
- Valentine’s sprinkles (optional)
How to make Strawberry Cake Mix Cookies
- Preheat the oven to 350°F. Line a baking sheet with parchment paper.
- Using a hand mixer or electric mixer, mix together the dry cake mix, vegetable oil, and eggs at medium speed until well incorporated.
- Scoop the cake mixtures into small balls (about a tablespoon) and place them on a lined baking sheet, allowing 2” space for spreading.
- Bake the cookie dough balls for 9-11 minutes, or until the cookies look set.
- Let the cookies cool for about 2 minutes on the pan, then transfer to a cooling rack. Allow cookies to cool for 10 minutes.
- If you want to add the valentine’s chocolate, place the white chocolate melts in a small or medium bowl. Microwave for 30 second increments, stirring in between, until mostly melted. Continue to stir until completely melted.
- Dip the cookies into the white chocolate, and transfer to the baking rack or cookie sheet to set.
- Serve cookies at room temperature and enjoy the best cookies!
How to store Valentine’s Day Crack
Store in an airtight container or wrap in plastic wrap. The cookies will stay fresh for 1-2 days allowing you to make them in advance.
