S’mores Ice Cream Sandwiches were what my family needed to celebrate the arrival of our newest addition, Baby Drew. It’s been challenging to give Reese one-on-one attention with a newborn in the house. With the beginning of Summer in action, I know that Reese wants to get outside and play. Anyone that has had a newborn knows how challenging that can be to simply get out of the house to run a simple errand.
During one of his naps, I grabbed Reese and asked her if she wanted to make special Ice Cream Sandwiches. Her eyes lit up and she said, “YES!” without hesitation.
S’mores Ice Cream Sandwiches Recipe
This recipe is simple enough that kids can assist with some of the steps. The hardest part is waiting for them to freeze; we were ready to dig in right away.
Ingredients
- 2 cups mini marshmallows
- 1 cup milk chocolate chips
- 4 cups Mayfield Creamery Ice Cream in Homemade Vanilla Flavor
- 8 Graham Crackers (We used the vanilla flavored crackers for extra flavor)
Recipe instructions
First, place a layer of plastic wrap inside of a 9″ x 12″ tray. Let the plastic hang over the edges. Place 8 graham cracker squares on the bottom of the pan. (4 graham crackers broken in half) Set aside.
Then, set your oven on the high broil setting. Line a cookie tray with foil and place the mini marshmallows on top. Place them in the oven for about 45 seconds, keeping an eye on them. Remove when they have slightly golden tops.
Next, scoop 4 cups of slightly softened Mayfield Homemade Vanilla ice cream into a large mixing bowl. Add in the chocolate chips and toasted mini marshmallows. Mix well to evenly disperse.
Spread the ice cream mixture over the top of the graham crackers in the tray. Place the remaining graham cracker squares on top to create sandwiches.
Place the tray in the freezer and allow the Mayfield ice cream sandwiches to freeze for at least 3–4 hours.
Finally, once frozen, pull the excess plastic wrap from the tray to pop the sandwiches out. Serve quickly to prevent melting.
Our ice cream sandwich party was a big hit. We sat on the porch together eating our sandwiches to celebrate the beginning of Summer. Change might distract us from living in the moment, but we can pause to enjoy each other and a sweet treat at the same time.
Our family used the S’mores Ice Cream Sandwiches to celebrate the completion of our family. Don’t worry, baby boy didn’t feel left out. He slept during the entire backyard party. I will make him a few once he turns one, which seems forever away but I know will be here faster than ice cream melts in the warm Texas sun.
