You don’t necessarily need a special occasion to enjoy cake, but this patriotic treat is a fun dessert to make. It puts a fun spin on cake treats and every one of your party guests will rave about them. You simply can not resist a cake popsicle made with a white chocolate shell filled with chocolate or vanilla cake.

What are Cakesicles?
Cakesicles are similar to cake pops but built like a popsicle. They are bigger than cake pops and easier to make.
Equipment and supplies needed
You will need these cooking tools:
- Colored Candy Melts, Almond bark, or Ghirardelli melting wafers.
- Parchment-lined baking sheets
- Piping bags
- Microwave-safe bowls w lids
- Ice cream silicon molds
Ingredients
- Yield: 7 servings
- Prep time: 10-15 mins
Ingredients for the cake pop mixture:
- Prepared Cake Mix – A boxed yellow cake is mixed with water, oil, and eggs and baked according to the package instructions.
- Chocolate frosting – store-bought frosting is fine or try a homemade chocolate frosting recipe.
Other ingredients needed:
- 1/4 cup colored candy melts, each (white, red & blue)
- Popsicle sticks
- Sprinkles
- Coconut oil or paramount crystals
First, make the cake pop mixture
- Bake the cake according to the package directions or make a homemade cake.
- Let the cake cool completely.
- Then, crumble it in a large mixing bowl.
- Next, stir the chocolate frosting into the crumbled cake. Cover and refrigerate until completely chilled.
How to make Patriotic Cakesicles
Follow these simple instructions to make fun patriotic desserts:
- Melt the first color of candy coating per package instructions.
- If it’s too thick add in 1 tsp of oil (mixed well) until smooth.
- Pour 1 spoonful of candy coating into the mold. Spread candy up the sides of the mold. If more chocolate is needed to cover the center do so.
- Slide in the popsicle sticks to the center making sure they are as even as possible.
- Freeze for 15 mins (no more no less or you risk cracking the chocolate)
- When placed in the freezer it needs to be flat and the sticks cannot be pointed down inside the chocolate they should hover above it.
- Remove trays from the freezer, using a small cookie scoop portion out the cake pop dough. (See above to learn how to make cake pop mixture)
- Press gently inside of the mold careful not to break the chocolate.
- Cover the back with melted chocolate. Clean up the edges as much as possible.
- Freeze for another 5 min so the chocolate is hardened and carefully remove from molds by peeling from the top down.
To remove from the mold
Very carefully loosen one of the end pieces. Peeling the mold from the top, very carefully peel the entire pop free. Carefully push the sticks up through the mold. Rest the cakesicle sticks on parchment paper.
Decorating the top
Melt the red & blue chocolate inside of their respective piping bags.
Cut a small hole and draw lines across the top of the cakesicle. Add the white, red, and blue sprinkles immediately. Let set for approximately 20-30 mins. Serve at room temperature.
Troubleshooting Tips
- If the stick won’t stay inside the dough, remove it from the mold, dip it in melted chocolate and insert it into pop. Let set for 10-15 mins.
- If the chocolate cracks when removing: Peel the chocolate off, if no cake is in the chocolate remelt it and start over.
- The sides are not fully covered: Dab a bit of the melted chocolate into the exposed areas and let dry.
- Extra chocolate is on the outer rim: Using a pair of clean scissors carefully trim it off.
How to store
If stored in an airtight container, these patrotic cakesicles last: up to 3 days at room temperature. up to 1 week in the fridge. up to 1 month in the freezer. Keep your cake pops fresh by vacuum sealing them before placing them in the freezer.
