Almond Flour Pancake recipe
Making pancakes from scratch with almond flour and almond milk is simple! This recipe is one of my family’s favorite. They can never get enough.
What ingredients are in Almond Flour Pancakes?
- 3 large eggs
- 2 tablespoons vanilla extract
- 1/2 cup Open Nature® unsweetened almond milk
- 1/2 teaspoon glycerite (or another sweetener)
- 1/4 teaspoon kosher salt
- 2 cups Open Nature® almond flour
- 1 teaspoon baking soda
- Avocado oil spray (for griddle)
- (blueberries/raspberries/strawberries for garnish)
- Sugar-free syrup for topping
- Butter for topping
How to make Almond Flour Pancakes
In a medium bowl, whisk together the eggs, vanilla, milk, glycerite, and salt.
Gradually whisk in the almond flour. Whisk patiently until very smooth and free of lumps.
Finally, whisk in the baking soda.
Heat a nonstick double burner griddle over medium heat, 4-5 minutes. Spray with oil. Use a 4-tablespoon scoop to scoop out the pancakes into the griddle.
Cook the pancakes about 3 minutes on each side until golden-brown and cooked throughout. Add fruit and butter.

Tips for getting the best pancakes
- Make sure you use the Open Nature® almond flour because it is finely ground which creates the light and fluffy texture we all love in our pancakes.
- As you are cooking your pancake batter, keep a close watch and make sure to cook them on medium heat so they don’t burn.
- I am a plain-pancake kind of person, but you can add more flavor by adding fruit like blueberries, strawberries, and keto-friendly chocolate chips.
What to do with leftover pancakes
I will be honest, we hardly ever have leftovers but in the event we do, we store the leftovers in our fridge. Then, we heat the pancakes up on the skillet for a few minutes or in the microwave for approximately 30 seconds.
