Earth Day is April 22nd and what better way to celebrate by baking Earth Day Cupcakes? This recipe was super easy and would be a great way to get your kids in the kitchen. My daughter loved to color the batter and see how it changes in color thanks to food coloring. (Check out 20 fun things to do with food coloring here)
A simple way to make Earth Day cupcakes
This is one of my favorite indoor activities for kids. You will soon find out why! It’s easy and the end result is enjoying some tasty cupcakes.
Earth Day Cupcakes Recipe supplies
- White Cake Batter
- Green and Blue Food Coloring
- Cupcake Liners
- Cupcake Baking Pan
- Mixing Bowls
How to make Earth Day cupcakes
Make Mix according to directions on the cake box.
Divide the cake batter in half.
Color one bowl green and the other blue by adding at least 15 drops in each. Mix well.
Spoon the blue mixture into each cupcake following the green. You can play it with, but be sure to add approx. 3 tablespoons of cupcake batter to each cup or it maybe too little or too much depending. Below was too little, but I added more after I took this picture.
Bake the cupcakes accordingly to the cake batter directions, but keep an eye on the cupcakes while they are baking so they don’t brown.
You will soon see how gorgeous the inside of the cupcakes look! I have seen some foodies put a red icing heart in the middle if you are looking to add some icing.
Another option is to make green and blue icing that you can put on top. I was okay without having icing because it looked so cool on top!

A simple Earth Day cupcake recipe that uses food coloring to make an out of this world creation that is tasty and fun to look at!
Ingredients
- White Cake Batter (Plus additional ingredients it requires, typically eggs, milk or water, oil)
- Green and Blue Food Coloring
- Cupcake Liners
- Cupcake Baking Pan
- Mixing Bowls
Instructions
- Preheat oven to 350 degrees.
- Make Mix according to directions on the cake box.
- Divide the cake batter in half.
- Color one bowl green and the other blue by adding at least 15 drops in each. Mix well.
- Spoon the blue mixture into each cupcake following the green. You can play it with, but be sure to add approx. 3 tablespoons of cupcake batter to each cup or it may be too little or too much depending. Below was too little, but I added more after I took this picture.
- Bake the cupcakes accordingly to the cake batter directions, but keep an eye on the cupcakes while they are baking so they don't brown.
- Bake 15-22 minutes or whatever the cake batter box requires.
- Top with green and blue icing or eat without!
