One side dish that I could eat by the many spoonfuls is crock pot cream corn. My mom bakes hers in the oven for most of our holiday gatherings and I look forward to eating this delicious recipe every time. I decided to try it in the crock pot instead and I will have to say it was just as delicious!
Crock Pot Cream Corn Recipe
Ingredients
16 oz frozen corn
1/4 c. Milk
8 oz. cream cheese
2 tbsp. Chunky picante sauce (more if you like more hot sauce)
Instructions
Mix ingredients into a crock pot, stir and cook for 1.5 hours on low or until all ingredients are melted.
Stir and Serve! Make sure you keep the heat on low so it doesn’t burn the dish.
We ate the crock pot cream corn side dish with a few other family favorites: Steak and Mashed Potatoes. You can’t go wrong with a meal like this! Now, we won’t mention how many calories are in this meal, but sometimes you got to splurge every now and then. Given all the calories I burn chasing my toddler, I am okay with it! I was super stuffed after the meal because I normally don’t have the time to have a full blown meal. My little one gets bored easily, gets fussy, and is ready to get down. After I clean her up, my appetite fades away. It’s been a great diet program, but I do miss being able to sit down and actually enjoy a meal.
Good thing this side dish makes excellent leftovers!
