Our family stumbled upon this delicious caramel snack mix when my stepson had a homework project that involved making a treat for his classmates. Of course, we only had a few days notice to help him out with this recipe. Gotta love teenage boys and their lack of planning ahead, but none-the-less we were thrilled to have at least three days notice. That’s a big deal in our house!
The caramel snack mix was perfect to make because it was easy to transport, delicious and made a good amount to share with his friends. And, it doesn’t involve a lot of complicated ingredients!
Caramel Snack Mix Recipe
Supplies:
1 12 oz box crispy corn and rice cereal (Chex Mix)
1 1/2 cups mixed nuts
1/2 cup of packed light brown sugar
1/2 cup butter
1/2 cup light-colored corn syrup
2 cups chocolate-covered raisins, peanuts and/or milk chocolate pieces.
Cooking Instructions
Preheat oven to 350 degrees.
In a large pan mix cereal and nuts. Set to the side.
In a small sauce pan combine brown sugar, corn syrup and butter. Cook and stir over medium heat until butter is melted and the mixture is smooth.
Pour over cereal mixture and stir to coat.
Bake in the oven for 30 minutes and stir twice.
Remove from oven and spread mixture in a single layer on a large piece of buttered foil.
Cool and divide into different pieces. Stir in your chocolate and you are done!
You can store this snack in a closed container for up to 2-3 days or freeze for 30 days.
Cereal snack mixes are wonderful for big parties, gifts, or just to munch on for several days at home. I may have to make another batch soon to treat my own neighbors for being so amazing lately! I seriously hit the neighborhood jackpot. It’s not unusual to find a treat or two on my front porch from a nearby neighbor. It’s so nice to have such thoughtful friends nearby.
Anyways, we won’t know what grade my stepson made on this dish, but I would bet money he got an A+!
