- 4-6 slices bacon
- 1/4 cup chipotle mayo
- 1/4 cup butter, melted
- 3 ears corn ears
- 3 tablespoons of lime juice
- Chili Powder – sprinkle to taste
- Toothpicks
How to make grilled bacon-wrapped corn on the cob
De-husk corn, cut off ends, and chop in half.
Soak corn in a deep dish with water to plump up kernels for 15 minutes.
Prepare chipotle mayo mixture – Mix chipotle mayo, chili powder, and lime juice in a bowl and set aside.
Lather corn with butter and wrap one slice bacon around it securing with toothpicks.
Heat grill to medium heat.
