Looks can be deceiving. Don’t be intimated to make St. Patrick’s Day Oreo truffles. They aren’t as challenging to make as it appears.

- Yields: 18 (1.5 tablespoon balls)
What do you need to make Pot of Gold Truffles?
You only need a few ingredients and supplies to make this easy dessert recipe:
Equipment needed
- Food processor
- Small or medium microwave-safe bowls
- Baking sheet
- Parchment paper
- rubber spatula
- Small cookie scooper (1.5 Tbs scoops)
- spoon
- Hand or electric mixer (optional)
Ingredients
- 24 Oreos
- 8 oz softened cream cheese
- 12 ounces chocolate almond bark or chocolate chips. (dark chocolate or melted chocolate chips work depending on your preference)
- 3 Airhead extreme strips (cut about 2” lengths) or 24 bite-sized candies
- 1/4 cup Gold confetti sprinkles
How to make Pot of Gold Oreo Truffles
- Line a large baking sheet with parchment paper or wax paper.
- Crush Oreos until fine crumbs using a food processor or other preferred method.
- In a medium mixing bowl, combine crushed Oreos, and softened cream cheese together until fully incorporated.
- Scoop Oreo mix into 1 1/2 tbs balls and chill for about 30 minutes.
- Using a toothpick and your fingers, try to shape the oreo balls into pots. Press in the toothpick around the top – about 1/8-1/4”. Push the top of the oreo ball up if you can and flatten the top surface. It won’t be perfect, and that’s okay.
- Place the almond bark into a small microwave safe bowl. Microwave for 30 second intervals, stirring between each session until it is fully melted. (Pro tip: if your candy isn’t melting smoothly, add a little coconut oil to make the lumps go away. A little goes a long way)
- Drop the little Oreo pots into the melted chocolate and use a spoon to make sure the truffles are fully covered in chocolate, and then lift out and onto the parchment paper.
- Let the truffles set for about a minute, but make sure it doesn’t set all the way. Drop the confetti sprinkles onto the flat surface of the pot. If you put the sprinkles on right away, they may just slide right off.
- Place the airhead into the chocolate and hold it in place for a few seconds to make sure it is secure. If you use the strips you can fold it back so that it doesn’t flop over.
- Allow them to set fully. Once they are fully set, you can use a sharp knife to trim the excess chocolate off the bottoms and clean it up.
How to store truffles
Keep the truffles refrigerated in an airtight container until just before serving. If the chocolate starts to get white spots, run a hairdryer over them on a low setting for a few seconds and they will disappear very quickly.
Recipe Variations
There are some different ways to alter this simple recipe:
- Top the cake balls with green sprinkles for general St. Patrick’s Day truffles.
- Use Oreo mint-flavored cookies to make mini Oreo truffles.
- Instead of using almond bark or dark chocolate, use green candy melts for green truffles. Top with chocolate sprinkles for more flavor.
